Ten crew-tested recipes

Each recipe is scaled for two people. Expand carefully, test the portion, and account for altitude, temperature, and stove performance.

Turkey Dinner

Stuffing, potatoes, gravy, and chicken in one warm trail bowl.

Pack

  • ½ box one-step stuffing mix
  • ½ packet brown gravy mix
  • 1½ cups potato flakes
  • One 7 oz chicken pouch
  • 2–3 cups water

In camp

  1. Bring water to a boil.
  2. Add the dry ingredients and chicken.
  3. Stir while adding water slowly to the desired thickness.
  4. Rest for 2 minutes and serve.

Sausage & Loaded Potatoes

A fast, hearty meal with browned sausage and instant potatoes.

  • 1 summer sausage
  • ½–1 packet instant homestyle potatoes
  • 1–2 cups water

In camp

  1. Slice and brown the sausage.
  2. Boil the water.
  3. Add water gradually to the potatoes.
  4. Fold in the sausage and serve.

Skillet Trail Pizza

A crew favorite that rewards patient, low stove heat.

  • Two or three 6-inch pizza crusts
  • Pizza sauce
  • Shredded mozzarella
  • Pepperoni

In camp

  1. Add sauce, cheese, and pepperoni to each crust.
  2. Place in a skillet and cover.
  3. Heat on low until the cheese melts, about 3–5 minutes.

Thai Green Curry

Rice noodles, coconut, vegetables, and chicken with a bold curry base.

  • 4 tsp green curry paste
  • 1 cup dried vegetables
  • 1 cup dried coconut milk
  • Two 7 oz chicken pouches
  • 12 oz rice noodles
  • 2–3 cups water
  • Optional cilantro

In camp

  1. Cook noodles; drain and set aside.
  2. Boil water with curry paste and coconut powder.
  3. Add vegetables and cook for 3 minutes.
  4. Add chicken, heat through, and serve over noodles.

Chicken Fajita Burritos

A flexible tortilla meal with chicken, vegetables, seasoning, and rice.

  • 1 packet fajita seasoning
  • ½ cup dried onion and bell pepper

  • 4 tortillas

  2. Cook vegetables and chicken with oil.
  3. Add seasoning and only enough water to coat.
  4. Mix in rice and serve in tortillas.
